Ripe cherries are carefully hand‑picked by smallholder farmers before being depulped and fermented, allowing the natural sweetness and acidity of the coffee to develop. Once fermentation is complete, the coffee is thoroughly washed and slowly dried, helping to preserve its clean structure and smooth, rounded character. This careful approach highlights both the bright fruit notes and the comforting sweetness found in the final cup.

Set in the diverse landscapes of Cundinamarca, Vianí benefits from a unique position across all thermal floors—warm, temperate, and cold—giving the region remarkable agricultural potential. Coffee here is produced by a network of smallholders who deliver their cherries to three local collection stations, with around 70% gathered through the long‑established centre run by Joseel Castiblanco near Quipile. Cherries arrive either already processed on the farm or brought in wet when the quality is right, before being dried carefully in a guardiola on site. Once a sizeable lot—typically 10,000 to 13,000 kg—is assembled, it’s transported to Racafé’s Bogota dry mill for further sorting and cupping prior to export.
